So clearly, football season is in full effect. I am not a football fan, but most of my friends enjoy it. On Sundays, it’s kind of a lonely time for me, given everyone is off somewhere watching the games all day. While I can’t much contribute to the friendly (sometimes friendly?) banter amongst opposing fans, I CAN contribute a great snack to enjoy while watching the game and bantering about it!! Presenting Skinny Chick Skillet Nachos! This is the easiest and fastest snack possible. And I even ate it for lunch yesterday as a meal. I may even start to enjoy football by eating these! (Highly unlikely…)
I used my recent staple, BeyondMeat, as the ‘beefy’ part of the Skinny Chick Skillet Nachos – remember it’s plant based! The best part about this recipe is that everything is interchangeable with whatever your favie flavies are! Have a bunch of meat eaters? Throw ground beef or turkey on top! Have a bunch of vegan football fans? Grab the vegan shredded cheese! Have a bunch of football fans that love a 5-alarm fire in their mouth? Layer that skillet with tons of jalapeños, chile peppers and HOT salsa! I love this recipe because it’s really whatever you want it to be, which is why I don’t provide measurements for the ingredients.
I used a lot of BeyondMeat, small dollops of medium salsa, a handful of shredded cheese, a handful of black beans and just a few jalapeños. I felt that by keeping the toppings light, I would be keeping this dish clean and healthy. I also want to add that the tortilla chips I used are fabulous and have added nutrients – they have quinoa and chia! These chips are made by Late July and can be found at Whole Foods, and probably a bunch of other grocery stores! You could also pump up the health by using swaps for the tortilla chips such as rice crackers, whole grain pita bread torn into pieces… etc.!

- Late July Brand Quinoa + Chia Tortilla Chips
- Beyond Meat 'Feisty' Meat Crumbles (faux meat)
- Black Beans (drained and rinsed to eliminate added sodium)
- Shredded 3-Cheese
- Sliced Jalapeños
- Preheat the oven to 350 degrees.
- Using an oven-safe skillet, layer the nachos with ingredients per the order in the ingredient list. Bake for 15-20 minutes. Enjoy!
