Curry Chickpea Salad spoon Hey ya’ll!!  I’m not southern and ya’ll isn’t part of my standard vocabulary…. but it seems so much more friendly and real than ‘Hey there!’ or ‘Hey guys!’ or ‘Heyyyyyy’.   Well, the latter IS in fact part of my standard vocabulary.  And I’ve been hanging out with a Texan, so, there you have it! : )   (Hi, Shanley!!)

I’ve had some requests for easy meals that can be brought to work – something that doesn’t take too much time to put together and is ready to eat either chilled, or microwaved.   Check out these babies for some past recipes that will suffice in this capacity:

I am definitely going to work on some new recipes that will fit the bill for quick and easy, take to work kind of meals.  Today I created a take off of my Chickpea ‘Tuna’ Salad….. introducing the Curry Chickpea Salad!  Even if you are a carnivore, due to the texture given by the chickpeas, this tastes eerily the same as Curry Chicken Salad and provides so much more in terms of health benefits due to swapping the chicken for chickpeas!

Curry Chickpea Salad no napkin This recipe is bursting with flavor and of course you can modify any of the ingredients for as little or a lot as you like – you can always do that with any of my recipes!  Unless you’re scared of changing amounts, I totally get that…. I used to have that fear too, and sometimes still do!  Vegan Ashley – this one’s for you love.  For the carnivores, you can go back to lean chicken and add a little bit to the chickpea mixture ; )

Curry Chickpea Salad

Curry Chickpea Salad


  • 15 oz. chickpeas, drained
  • 4 Tbsp veganaise or mayonnaise
  • 2 celery stalks chopped small
  • 1 scallion, chopped
  • 1/4 cup currants or raisins (I have a boat load of currants to use!)
  • 1/4 cup dried cranberries
  • 1/2 Tsp curry powder
  • 1/4 Tsp cayenne powder
  • 1/4 cup cashews roughly chopped
  • salt/pepper to taste


  1. In a small bowl, combine the veganaise, curry powder and cayenne.
  2. In a large bowl, combine the rest of the ingredients and then stir in the veganaise mixture. Mix well and serve chilled either in a bowl or a pita!
