Pickled Veggies Aren’t Just for Bloody Mary’s – {Wheatberry Asparagus Salad}

Wheatberry Asparagus Salad Square Living in Arizona, we’re quite spoiled as we have THE most beautiful Winter season ever.  I mean, if you’re not a fan of snow.  And heck, even if you are a fan of snow, we have that too in Arizona…. just a couple hours away from the valley. : )   Since our Winters are so perfect, we’re able to enjoy Farmers’ Markets all year long!  One of my favorite vendors here in Arizona is Pickled Perfection.  I LOVE going by their tent to taste some amazing pickled mushrooms, green beans, celery and asparagus!  Those are some of my favorites, but they do have many more perfectly pickled delights!

Wheatberry Asparagus Salad PP Pickled Perfection has launched a recipe contest!  I decided to enter – rules are it has to be original and use one of their products.  Ok, no big deal for This Chick!  Well, the first thing that comes to mind with Pickled Asparagus or Pickled Celery is….. BLOODY MARYS!  And I have actually been craving a Bloody Mary for a few weeks – right Vegan Ashley and Shanley?!  But, that’s just too common and too many people will submit a Bloody Mary recipe for the contest.  So I set out to create a recipe that goes with my usual cooking goals:  clean, healthy, complete meal.

Thus, the Wheatberry Asparagus Salad was created!  It has really great flavor and a lot of textures going on.  Do you like a good spicy kick in the pants?  I offset the spicy pickled asparagus with some sweet and tart dried cranberries while soothing the flavor with some fresh feta cheese.  It tames the spicy kick in the pants without covering up flavor.  This super easy to put together meal is great for the office since it will last you all week and is perfect chilled or served at room temperature.  Vegan Ashley will enjoy this without feta and the carnivores should just keep this as a Meatless Monday option…. mmmkay? ; )    Make sure you check out Pickled Perfection on Facebook and vote for my recipe if it makes it in the contest!  Woot woot!  I’m off to make a Bloody Mary with the rest of my Spicy Pickled Asparagus!

Wheatberry Asparagus Salad


  • 12 spears pickled asparagus, chopped (I find mine at the local Farmer's Market, but you can try Whole Foods too)
  • 2 cups cooked wheat berries, chilled (or leftovers)
  • 1 quarter of sweet onion sliced super thin, then sized to match the asparagus
  • 1/4 cup dried cranberries
  • 1/4 cup dried currants (or raisins if you can't find any)
  • 1/4 cannelini beans, drained and rinsed
  • 1/4 cup feta cheese, crumbled


  1. What do you do?! Put it all together in a large bowl and gobble it up! :)
