One of my favorite things to do, is trick my brother with fake meat! Sometimes he knows, other times…. not so much. I think I finally found the best meat subsitute because at first he didn’t realize it was meatless meat, until his mouth was on fire. Yes, on fire, and he asked me what I did to the meat! I fell in love with this new meat sub called Beyond Meat. It blows away Morningstar Farm, Gardein, Boca, etc. It’s not a soy product, but plant based! You know, the best food comes from the earth! It comes in a regular flavor or a “Fiesty” flavor… and that’s where I set off a 5 alarm fire in the mouth. Super spicy but amazing! But when I made this Simply Clean Taco Salad a second time, I used the regular flavor and it certainly could use a little added spice. My brother thought the similarity to meat in texture, flavor and color was so uncanny, that he had me try it on his friend, who is a straight up meat eater. The friend had no idea : )
The best part about my Simply Clean Taco Salad, is that it’s 100% customizable and can make for a fun dinner party….. DIY Taco Salad! Set up a bar of the various toppings: refried pinto beans, chopped tomatoes, shredded cheddar cheese, black beans, avocado, jalapeños, corn, crushed tortilla chips, salsa, hot sauce, sour cream, you name it!
The best best part about my Simply Clean Taco Salad is that everything is a whole food or minimally processed. Keeping it lean and clean, friends! For the vegans, remove the cheese. For the carnivores, this is a perfect Meatless Monday option, or you can sub the plant based meat for ground turkey or beef.
By the way…. if you’re not part of the Facebook community, you missed out on an important post! Truth be told…. This Chick, is actually a pescatarian! This means I eat fish. While I have kept this a vegetarian blog complete with vegan and carnivore modifications, I have been toying with the idea of introducing some fish recipes! Check out the results! I never expected to get the kind of response that I did, 35 Likes and many supporting comments! So, going forward, I will be incorporating yummy clean eating fish recipes!

- Romaine lettuce, chopped
- 1 package Beyond Meat or meatless meat substitute
- Refried Pinto Beans (vegetarian kind in a box at Whole Foods)
- Shredded Cheddar and Jack Cheese
- Tortilla chips, crushed for topping off the final product!
- Start with a base of chopped romaine. Add toppings as described above or in the content of the blog using you're desired amounts for a clean and healthy salad!
