Lemon Basil Bean blurred Can I just start off by saying, this dish photographed so beautifully, that I’m having trouble deciding on a select few photos from the 29 I took?!  It’s like food porn.  The pictures make you “oooh” and “ahhhh” and you feel your eyes widen at the sight of the beautiful color and depth of the image.  And most importantly, it makes you hungry.

I really wanted to create another recipe for you all that was quick and easy like the Cool Avocado and Pistachio Mash or the Chickpea ‘Tuna’ Salad.. In This Chick’s kitchen, a ‘quick and easy dish’ has a few key characteristics.

1) No cooking necessary.

2) Very few ingredients.

3) Very few steps for preparation.

While there is nothing more that I enjoy than hanging out in my kitchen, working on a recipe with a bounty of ingredients and baking in the oven so that the aroma fills the house, this is a feeling best saved for Fall and Winter.  Seasonal dishes in the summer call for ‘quick and easy’.  Lemon Basil Bean bench light I.LOVE.BEANS.  Don’t you?  They’re such a great source of protein.  My favorite lately, if you haven’t noticed: CHICKPEAS!  Aka, garbanzo beans.  Aka, the one ingredient (aside from garlic) that you will always find in great quantities in This Chick’s pantry.  Every time I go to Whole Foods, I pull a few boxes of chickpeas (the new packaging in the bean aisle) regardless of if I need them or not.  Roast them for a quick snack……  toss them in a salad……. mash them for This Chick’s Chickpea ‘Tuna’ Salad.   Lemon Basil Bean zoom bright I added Hemp Hearts to this dish for a nutritional bonus – not that this Lemon Basil Bean Salad is lacking nutrition.  It’s actually a nutritional powerhouse! BOOM!  Hemp Hearts have crept their way into This Chick’s house.  Hemp Hearts are essentially raw shelled hemp seeds and provide around 10 grams of plant-based protein!  They’re also sky high in Omega-3s, Omega-6s and fiber.  And hemp hearts are so versatile:  add them to a salad, fresh smoothie, cereal, yogurt, pasta; bake into muffins or use as hot cereal. I mean for real, endless possibilities and endless amounts of nutrition!  Gotta love it!!  Vegan Ashley will be happy with this dish.  For the carnivores, bacon bits?  Let me know what you come up with ; ) chloe+isabel

Lemon Basil Bean Salad with Hemp Hearts


  • 13.5 oz organic Chickpeas (Whole Foods box), drained and rinsed
  • 13.5 oz. organic Kidney Beans (Whole Foods box), drained and rinsed
  • 15 oz. organic Fava Beans, drained and rinsed
  • 3/4 cup fresh Basil, chopped
  • 2 stalks Scallions, chopped (include white and green parts)
  • 1 Tbs olive oil
  • 1.5 Tbs apple cider vinegar
  • juice of half a lemon (use whole lemon if you desire)
  • zest of one lemon
  • Hemp Hearts
  • salt, if desired


  1. Put the chickpeas, kidney beans and fava beans in a large bowl.
  2. Add chopped scallions and basil.
  3. Stir in the olive oil and apple cider vinegar, lemon juice and lemon zest.
  4. Mix in desired amount of hemp hearts.
