Asparagus Avocado QUinoa Bowl Birds Eye Holy cheese and rice!  It’s This Chick Eats Clean’s 1 year blogiversary!  One year ago today, my Valentine was my blog, as I launched it live for the first time on the world wide web.  Did you know blogiversary is actually a word in the Urban Dictionary?!   I know, crazy.  It is so exciting to think I have done this for 1 year.  While difficult at times, it certainly has been a ton of fun!  And personally, I think if a blogger out there isn’t having fun, they’re not blogging right.  There’s no rules to blogging; it’s what you want to do, how you want to do it, and when you want to do it.  I had to keep that in mind when I was frustrated that I couldn’t get a post up in time when I was traveling for work, or when my 20 year old cat passed away and I had no interest in cooking that week.  Bloggers are human, with human problems and make human errors.  Which brings me to today’s recipe – the Asparagus and Avocado Quinoa Wrap, Unwrapped!

Ok back to the Wrap, Unwrapped.  So, I’ve never been able to successfully assemble a wrap.  They don’t stay sealed, they break apart, and it’s just an all around epic fail for me.  Do I see some of you nodding your heads in agreement?  Yep…  Epic Fail.  I picked up the wrap and only held it about 6 inches in the air before half of its contents began to fall out all over the plate and the counter.  I said a bunch of swears, dropped whatever was left of the wrap onto the plate and decided it would now be a Wrap, Unwrapped.  Here’s the thing, epic fails happen in real life.  Failure makes us human!  If you don’t fail from time to time, you lose the opportunity to learn and better yourself from your mistakes.  What did I learn from failing at wrap assembly?  I’m not sure yet…..

I recommend, to eliminate stress, simply eat the Asparagus and Avocado Quinoa Wrap out of a bowl.  Unless you have a trick to the wrap, please, DO SHARE!  Maybe I’ll give you a special gift as well!   Let’s do that – send me a picture of your best wrap, wrapped, and we’ll enter you in for the special This Chick Eats Clean exclusive gift as well!  Vegan Ashley, remove the feta and straight up go to town on this, girl!  For the carnivores, I would suggest leaving this as is for a Meatless Monday special…. which then pours into Tuesday and Wednesday’s lunch.  It’s a great dish to bring to work for a healthy clean lunch!

Asparagus and Avocado Quinoa Wrap, Unwrapped

Asparagus and Avocado Quinoa Wrap, Unwrapped


  • 2 cups cooked quinoa
  • 10 spears asparagus
  • 1 avocado, cubed (you don't want one that is too soft/ripe in order to maintain shape)
  • 1/4 cup crumbled feta cheese, more as desired
  • 1 Tsp garlic salt
  • 1 Tsp lemon pepper


  1. If you don't have leftover quinoa, prepare according to package instructions. If you do have leftover quinoa, congrats! You have shortened the cooking time drastically : )
  2. Steam the asparagus until nice and tender. I used the Breville Risotto Plus to cook the quinoa and steam the asparagus in the steamer basket on top. GREAT product.
  3. Let the quinoa and asparagus cool a bit and then combined everything in a large bowl. Toss lightly to combine. Best served at room temperature. You can also add about 1 Tbsp of Italian dressing for some added flavor and moisture.

Congratulations on your first year Steph, we all love seeing what you will be coming up with next! What I would personally love to see on your blog this year are heartier dishes that I can eat cold, on the fly, at work! I have to eat before I go in for the dinner shift and by 9pm, I am starving. Going out to eat at 1am is no fun, and options are usually not the healthiest. Thanks girl!
