Happy New Year, everyone!  I am so excited to see what 2014 has in store for us!   I’m kicking off the New Year with a product review and giveaway, so you know the year is bound to be full of wonderful things! : )   Did you all have a fantastic time celebrating last night?  I went to a dear friend’s house to ring in the new year and brought my SooFoo Kale Pom Salad with me!  It was delicious and the bowl was devoured in no time.  In fact, there was probably a quarter of a cup left in the bowl for a while and I found her husband finishing it off!

SooFoo.  What?  Yes, you may recall I used it once before in my food processor magic Coconut SooFoo Bowl post.  Soon after that post in August, SooFoo vanished from the shelves of Whole Foods.  I remember my Mom calling me from one of the stores in town, squealing with joy, because she got the last bag on the shelf!  Well, hello 2014, SooFoo is back and better than ever!  This super cool super food is going to be your best friend for Clean Eating in 2014!  New Years resolutions and goals are in the making right now, why not plan to eat clean and see how amazing you feel? SooFoo Kale Pom Salad

SooFoo is a fantastic product – so versatile and can be used in so many ways!  Put it in a salad, as I have here with the SooFoo Kale Pom Salad.  You can use it in a soup, as hot cereal, in veggie burgers, or even used as stuffing!  For more simplified ways, you can serve the flavored varieties (Hint of Curry. Garlic and Herb, Moroccan Medley) alongside tofu steak, grilled chicken, breaded fish, etc.  Ok, so what exactly is it?  OH EM GEE, you will love the healthy tune this little bag sings!  (And don’t forget to enter the giveaway for your chance to try all 4 flavors!)

I decided to do a yummy clean and green salad with my bag of SooFoo.  With tight, curly, kale torn in small pieces, a fork full becomes a party when the SooFoo, pomegranate arils and toasted almonds are added!  Vegan Ashley is going to love this as it is, since those super cool SooFoo’dies in San Fran made it vegan off the bat.  (Now that’s a tongue twister:  Super Cool SooFoo’dies in San Fran.) For the carnivores, I think this would be delicious with some grilled salmon!

SooFoo Kale Pom Salad

SooFoo Kale Pom Salad


  • 2 cups finely chopped kale
  • 1 garlic clove, minced
  • 2 cups cooked SooFoo®
  • 1/4 cup toasted slivered almonds
  • 1/2 cup pomegranate arils
  • 1/4 cup lemon juice
  • 1/3 cup extra virgin olive oil
  • salt/pepper to taste


  1. Cook SooFoo per package instructions. Set aside to cool.
  2. In a large bowl, combine the kale, almonds, pomegranate arils. In another bowl, whisk the lemon juice, olive oil, garlic, salt and pepper. Combine the dressing with the kale mixture.
  3. Add the cooled SooFoo to the salad and toss lightly.
  4. Serve immediately! (Note, if you're going to serve later, or want to eat it through the week, dress as you serve)
