Guest Blog Post: Chewy Cashew Cookie Bars!

Hey hey strangers!   I’ve been M.I.A due to a  sweet little thing called vacation!  When it’s 108 degrees on a daily basis, it’s time to get out of dodge and seek more human weather : )

IMG_6231 Chewy Cashew Cookie Bars

These sweet treats are full of delicious, nutty flavor and the Fudgy Cacao topping does not hurt.  I made the poor decision to share these with my family and they were pretty much gone in 60 seconds.  Nobody questioned the fact that they are actually not too terrible for you either.  Enjoy these chewy, nutty, fudgy delights!.. I know I did.

IMG_6192 Step 1: Cashew Cookie Crust

  • 1 ¾ cups of cashew butter
  • ¾ cup of coconut sugar
  • ½ cup of coconut nectar (or agave)
  • ½ cup of oats
  • ½ cup of cacao nibs
  • 1 tsp of pure vanilla extract
  • pinch of salt


Place all ingredients in a bowl and mix until well combined.

IMG_6197 Press dough into an 8×8 inch pan lined in plastic wrap.  Once dough layer is even, set aside.

IMG_6203 Step 2: Fudgy Cacao Topping

  • ½ cup of coconut nectar (or agave)
  • ¼ cup of coconut oil
  • 1/3 cup of cacao powder
  • ½ tsp of vanilla

Directions: Whisk all ingredients together until smooth and creamy.  Pour topping on top of Cashew Cookie Crust.  Place pan in the freezer to harden for an excruciating hour…. DIG IN!
