Awards and Superbowl Party Snacks Once More! – {Toss ‘Em Back Roasted Chickpea Poppers}

In just a few days, people will stay home or go to a friend’s house or nearby sports bar…..  stores will be vacant and babies will be put down for naps….. as the country settles down for THE SUPER BOWL.  Super Bowl Sunday might as well be a national holiday.  As someone that personally doesn’t care for anything more than the commercials, half-time show and the good food and company of a Super Bowl party, I love this day for everything except the football. Haha!  I actually have no plans this year and might be just home in the kitchen trying out new recipes and watching the commercials and half-time show.  However if you’re attending a party, or hosting one, here is another fantastic and healthy snack food swap for Super Bowl and the upcoming Oscars!

Who doesn’t love chickpeas?!  Okay, I’m sure some people don’t because they’re a bean…. and, well, beans have a bad rap sometimes. BUT, these chickpeas (renamed to Poppers out of the love of a close friend), are so flavor packed, that you can fool bean haters and they really won’t know WHAT in the heck they’re eating.  They’ll just know the flavor keeps them going back for more – one you pop, you can’t stop!   I made three different flavors of Poppers:  Super Sweet Cinnamon Sugar, Lip Smackin’ Dorito Packin’, and Garlic Parmesan.  DELISH!

I’d also like to do a Recipe Rewind since a lot of This Chick’s recipes over the past year can be great for Super Bowl and Oscar’s parties!  (This Chick Eats Clean turns 1 year old on February 14th!)  Check out each of these clean and healthy recipes and wow your company:

Roasted Chickpea Poppers

Ingredients

    Super Sweet Cinnamon Sugar Poppers
  • 15 oz. chickpeas, drained and rinsed
  • 1 Tbsp olive oil
  • 1 Tbsp granulated sugar
  • 1 Tsp cinnamon
  • Lip Smackin' Dorito Packin' Chickpeas
  • 15 oz. chickpeas, drained and rinsed
  • 1 Tbsp olive oil
  • 1 Tsp onion powder/granules
  • 1 Tsp garlic powder
  • 1 Tsp cumin
  • 1 Tsp paprika (I had smoked, so good)
  • 1 Tsp chili powder
  • 1 Tsp salt
  • DASH (literally) cayenne
  • 1 Tsp plus extra nutritional yeast (I sprinkled some on top just before popping in the oven)
  • Garlic Parmesan Chickpeas
  • 15 oz. chickpeas, drained and rinsed
  • 1 Tbsp olive oil
  • 1 Tsp minced garlic/garlic powder
  • 1/4 cup grated parmesan
  • salt/pepper to taste

Instructions

  1. Super Sweet Cinnamon Sugar Poppers
  2. 1. Lay the chickpeas in a single layer on paper towel and pat dry, REALLY well. Think the more dry, the more crispy these poppers will be!
  3. 2. Preheat the oven to 400 degrees. In a small dish, combine the sugar and cinnamon and set aside.
  4. 3. Spread the chickpeas on a piece of parchment paper on a baking sheet and cook for 15 minutes.
  5. 4. Then put them in a large bowl and add the olive oil and toss well so all are coated. Next add the cinnamon sugar mixture - you may need to get a spoon in there to break up the clumps that may form from dancing with the olive oil.
  6. 5. Spread onto the parchment paper again (you can use the same sheet) and bake for 15-20 minutes. When finished, let them cool in the oven with the door cracked and oven turned off.
  7. Lip Smackin' Dorito Packin' Poppers
  8. 1. Lay the chickpeas in a single layer on paper towel and pat dry, REALLY well. Think the more dry, the more crispy these poppers will be!
  9. 2. Preheat the oven to 400 degrees. In a small dish, combine the dry ingredients and set aside.
  10. 3. Spread the chickpeas on a piece of parchment paper on a baking sheet and cook for 15 minutes.
  11. 4. Then put them in a large bowl and add the olive oil and toss well so all are coated. Next add the dry ingredient mixture - you may need to get a spoon in there to break up the clumps that may form from dancing with the olive oil.
  12. 5. Spread onto the parchment paper again (you can use the same sheet) and bake for 15-20 minutes. When finished, let them cool in the oven with the door cracked and oven turned off.
  13. Note: Try grated cheddar instead of nutritional yeast for more cheesiness and follow cooking instructions of the Garlic Parmesan Poppers!
  14. Garlic Parmesan Poppers
  15. 1. Lay the chickpeas in a single layer on paper towel and pat dry, REALLY well. Think the more dry, the more crispy these poppers will be!
  16. 2. Preheat the oven to 400 degrees. In a large bowl, combine the olive oil, garlic, parmesan, salt and pepper. Toss the chickpeas in the mixture until well coated.
  17. 3. Spread the chickpeas on a piece of parchment paper on a baking sheet and cook for 45 minutes. (Yes, 45 minutes this time!) When finished, let them cool in the oven with the door cracked and oven turned off.

First of all, your mom is adorable and couldn’t be any sweeter for stopping by to wish you a Happy. :)

Second, I am ALL over those Dorito poppers. I have to admit, I’ve tried roasted chickpeas several dfferent ways and have NEVER been a fan (despite my undying love for the bumpy legume), but this spice combo (and the promise of a Dorito-like flavor) just has me WAY too intrigued to NOT give them a go one more time.
