A Quinoa State of Mind – {Zucchini+Tomato Quinoa} – C+I Giveaway WINNER Announced!

Zucchini Tomato Quinoa Hope everyone had a wonderful Labor Day weekend!  I went to bed Monday night feeling like I needed a long weekend from my long weekend.  Isn’t it funny how that works?  Raise your hand if you have ever said “I need a vacation from my vacation”…. mhmmm…..

Did you hear that the Pumpkin Spice Latte is now being served again at Starbucks?!  The Starbucks Gods must’ve read last weeks blog post! Although I’m ecstatic, I have yet to order one because I just can’t fathom hot coffee while it’s 100+ degrees out, unless it’s my first cup of the day out of my coffee maker.  That’s something I cannot explain….. why I can have hot coffee as soon as I wake up in the morning, but no way in heck am I going to order one out.   Zucchini Tomato Quinoa Zuccs

This weeks recipe is a result of purely “I’m hungry and I don’t have time to run to Whole Foods, what’s in the kitchen?”  Sometimes, these are the best dishes!  And from my Instagram postings of these impromptu “what’s for dinner” pictures, you all seem to agree!  Are you following This Chick on Instagram yet?

Zucchini Tomato Quinoa plated I used a combination of red and white quinoa simply for color and because I was finishing up a couple bags of quinoa.  But you could use whatever your favorite color quinoa is, or even another grain!  The yellow tomato was an heirloom from Whole Foods that needed to be used – I do enjoy using yellow instead of red tomatoes because they’re less acidic and slightly sweeter!

This dish is ready-Vegan for Miss V.A., who has been M.I.A for her beautiful sister’s wedding!  (This Chick can’t wait to see her!) And for the carnivores…. Zucchini+Tomato Quinoa

Zucchini+Tomato Quinoa


  • 1 yellow tomato, chopped (will likely be the heirloom variety)
  • 2 small zucchini, chopped (see images above for chopping shape)
  • 2 cloves garlic, minced
  • 1 13.5 oz. box cannellini beans
  • 1 1/2 cups leftover quinoa
  • 1 Tbsp olive oil
  • Lemon Olive Oil
  • pink salt
  • pepper/garlic herb blend


  1. ~Heat olive oil in a large pan. Sauté zucchini for 5 minutes or until browning begins - you'll notice they start to marry to the pan. Add salt while sautéing.
  2. ~Add garlic and stir for 1 minute, then add tomato. The tomato will add more cooking liquid, which is perfect timing because I'm guessing that now there's a really strong marriage of zucchini to the pan!
  3. ~Add cannellini beans and leftover quinoa and stir for another 3 to 5 minutes, while adding a splash of lemon olive oil. Stir in salt/pepper or garlic herb blend, as desired.
